Ginger Crinkles a la Julia Child

It’s Back! My Crazy Christmas Blowout! And I’m kicking it off with my favorite Christmas cookie recipe – Ginger Crinkles. I’m making a batch to take to a church Christmas party and thought I’d pull out my Julia Child imitation to show you how it’s done…

Ginger Crinkles

2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon ground cloves
1 cup packed brown sugar
3/4 cup shortening (or cooking oil)
1/4 cup molasses
1 egg

Stir together the first 6 ingredients. Combine the remaining ingredients and beat well. Add dry ingredients to beaten mixture, beating well. Form 1-inch balls. Roll in granulated sugar. Place 2 inches apart on an ungreased cookie sheet. Bake in 375 degree oven about 10 minutes. Makes 48

Yummy Dill Chicken Salad

I’m a bit of a chicken salad connoisseur. If I’m eating lunch at a new restaurant and they have chicken salad on the menu, 9 times out of 10 I’ll order it. I guess I’m on a quest for the perfect chicken salad.

My all-time favorite chicken salad was at the Flying Star in Albuquerque, NM. It’s this yummy dill chicken salad that knocks it completely out of the park.

chicken salad on pitaI’ve worked on my own chicken salad recipe and integrated the dill. It may not be as good as Flying Star, but this chicken salad is pretty dang good, even if I say so myself.

First, I boil 2 chicken breasts, let them cool, then shred, and dice them.

Then put in 1 stalk celery, diced.
2 slices of Vidalia onion, diced
Red grapes cut in half and
Fresh baby dill (a couple sprigs diced)
Low fat Mayonnaise
Salt/Pepper
Chill/serve.

I like mine served on whole wheat pita or pocket bread. Enjoy!

Chocolate Strawberry Snack

Here’s one of my favorite snacks to eat when my sweet tooth gets going. It’s delicious, nutritious and doesn’t stack on the pounds (unless you eat mounds of it).

3-4 large fresh strawberries (diced)

1 TBSP dark chocolate chips or some other diced dark chocolate

Mix and eat.

Eating healthy and finding your ideal weight doesn’t have to be a white-knuckled nightmare. Shift your thinking and energy around achieving your ideal weight, add in some simple lifestyle changes and you can be looking and feeling great too.

Satisfy Your Sweet Tooth Naturally

One of the first things most people decide to do when they set out to look and feel better is reduce their sugar intake.

healthy sweet snackI don’t know about you, but I have a sweet tooth and going completely no-sugar is tough. And honestly, I didn’t do that. What I did do, is start replacing some of those unhealthy choices with healthier ones. Here’s a recipe I love that is fast, easy and a healthy alternative to grabbing a bakery item.

In a food processor, finely chop the following:

A small handful of pecans
1 date
(optional) dash of salt
(optional) dash of cinnamon

Now, put some of your favorite fruit in a bowl… like chopped apples, strawberries, blueberries, etc. Top the fruit with the nut/date mixture.

If you have a little extra of the topping, save it. You can also put it atop a fruit smoothie. Yum!
